Picture us—two college kids, Becky and me, swaying under neon lights just off the Texas A&M campus. That’s where our adventure begins, launching decades of road trips, bold moves, and even bolder dreams.

First, we hit the Outer Banks, where a creaky pier in Kill Devil Hills became the backdrop for my shaky-kneed proposal. From there, Florida called: Becky dove into nutrition while I geeked out on wastewater treatment. Tampa saw the arrival of our first son, Ethan; a stint in Alabama brought our second, Eric.

All along, beer hummed in the background—back-yard hangs, college nights, pool-side afternoons. Becky’s love took root early, watching her dad tap a keg after mowing in the blazing Texas heat. My fascination was the science: if I could reclaim water, surely I could turn it into beer. Eric followed suit, pairing a Chemistry major with a Fermentation Science minor at Appalachian State to brew pints that make people sit up and notice.

By 2003 we’d settled in Wilson, North Carolina. We rolled up our sleeves, started businesses, coached, taught, and poured ourselves into a community we quickly grew to love—always squeezing in brewery visits across the Carolinas (and well beyond).

Fast-forward to 2020: Ryan and Mahalia Witter-Merithew launch Casita Brewing, blending art, community, and boundary-pushing beer in downtown Wilson. Their taproom felt like home from day one. So when Mahalia put Casita up for sale, we jumped—determined to keep that spark alive. We didn’t found Casita, but we’re honored to steward it. Becky brings pure beer joy, I lend the technical chops, and Eric fuels the brewhouse with creativity and chemistry.
