Picture Becky and me back in college, two kids swaying under neon lights just off the Texas A&M campus. That’s where our adventure started—decades of road trips, bold moves, and even bolder dreams.
Next stop was the Outer Banks, where a creaky pier in Kill Devil Hills set the stage for my shaky-kneed proposal. From there, Florida called: Becky dove into nutrition while I geeked out on wastewater treatment. Tampa brought our first son, Ethan. A stint in Alabama brought our second, Eric.
Beer was always running in the background—back-yard hangs, college nights, pool-side afternoons. Becky’s love started young, watching her dad tap a keg after mowing in the blazing Texas heat. My hook was the science: believe it or not although wastewater treatment and brewing beer produce far different results, the processes aren't all that different. Eric picked it up, too—chemistry major, fermentation science minor from App State—ready to brew beers that make folks sit up and notice.
By 2003 we’d settled in Wilson, North Carolina. We rolled up our sleeves, started businesses, coached, taught, and rooted ourselves in a community we love—never missing a chance to visit breweries across the Carolinas and beyond.
Fast-forward to 2020: Ryan and Mahalia Witter-Merithew launched Casita Brewing downtown. From day one it felt like home. So when Mahalia decided to sell, we jumped. We didn’t found Casita, but we’re honored to carry it forward. Becky brings the pure beer joy, I bring the technical side, and Eric drives the brewhouse with creativity and chemistry.
At Casita, we celebrate family, flavor, and fun. Walk in and you’ll find friendly faces, a dash of mischief, and plenty of heart. Whether it’s a crisp lager or a barrel-aged stout, beer here is more than a drink—it’s a bond, a conversation starter, a tradition that pulls people together.
